  • ½ tsp turmeric powder
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 10-12 curry leaves
  • 1 tbsp ginger (grated)
  • 2 tbsp coriander leaves (chopped)
  • 1 tbsp lemon juice
  • 2 tbsp oil
  • Salt (as per taste)

For Coconut Chutney & Sambar:

How to Make Masala Dosa

Step 1: Prepare the Dosa Batter

  1. Wash and soak rice, urad dal, chana dal, poha, and fenugreek seeds in water for 6-8 hours.
  2. Grind the soaked mixture to a smooth batter, adding water as needed.
  3. Transfer to a bowl, add salt, and let it ferment for 8-12 hours (overnight).

Step 2: Make the Potato Masala Filling

  1. Heat oil in a pan, add mustard seeds, urad dal, chana dal, curry leaves, and green chilies. Sauté until dal turns golden brown.
  2. Add sliced onions and ginger, and sauté until onions turn soft.
  3. Add turmeric powder, salt, and mashed potatoes, then mix well.
  4. Stir in chopped coriander leaves and lemon juice, then turn off the heat.

Step 3: Prepare the Dosa

  1. Heat a non-stick or cast-iron tawa on medium flame.
  2. Pour a ladleful of batter onto the center and spread it in a circular motion to form a thin dosa.
  3. Drizzle a little oil or butter around the edges and cook until golden brown.
  4. Place the prepared potato masala in the center and fold the dosa.
